everyone is going to respond to different foods individually. There are always reasons behind it, but i feel many people over complicate this and analyze too much. Simple observation (through visual and feedback) can help figure this out quickly. How is your digestion? How are your pumps? Do you feel full and tight? Strength increases? Energy levels after meals? Asking questions along those lines can help you realize what you respond best to really quick. We CAN, while analyzing this issue, also figure out which macros your body may respond best to. Bison over chicken would signify slower digestion and more fat. Yams over rice some fiber and lower GI. Now there are genetic reasons you would also digest certain foods better as well, but there is no concrete method to figure this out (that i am aware of, maybe there is) other than observation and theory.
My advice is try different combinations and pay close attention. Ask yourself the questions i listed above and any others that may be pertinent to the subject. Always pose questions to figure out how and why something works. It just gives you a better understanding and ability to manipulate variables later, and you can build on that.
