Airmail Vs. EMS to Canada?

Specifically EMS and Airmail delivery from places in Europe what are the differences? I know Airmail for some reason doesn't have Tracked Shipping. EMS has Tracked Shipping but Costs a lot more and that's only difference from what I understand. Which Tracked Shipping stops once it crosses the border into Canada which is a problem?

I read that EMS gets stuck in Customs for a long time it seems is that true? I have read people state in one thread on here that EMS can't be opened and searched without good reason and only in ISC assuming the package is suspicious in someway?

 
I'm wondering as things get back to normal soon at least with shipping. Are they both equally good choices for success. How reliable has everyone's experience been so far, and as things progress slowly?

The database has been restored from a backup from early August. Members that registered after August 2, can register again.
