Bean Salad With Bacon and Chives

This unbelievably easy bean salad boasts two forms of protein and little else. After rinsing a can of cannellini beans, you’ll toss them with apple cider vinegar, olive oil, whole-grain mustard, and a bit of salt and pepper. At that point, you can store the mixture in the salad for up to eight hours, which makes this salad a great protein-rich lunch on the go. Just before you eat, toss in the crispy bacon and chopped fresh chives for a crunchy and deliciously fresh meal.

INGREDIENTS:

6 slices bacon

315.5-ounce cans cannellini beans, rinsed

3tablespoons apple cider vinegar

3tablespoons olive oil Coupons

3tablespoons whole-grain mustard

kosher salt and black pepper

3tablespoons chopped fresh chives

DIRECTIONS:

Cook the bacon in a large skillet over medium heat until crisp, 12 to 15 minutes; crumble, cover, and set aside at room temperature. Toss together the beans, vinegar, oil, and mustard and season with ½ teaspoon each salt and pepper. Refrigerate for up to 8 hours. Just before serving, toss with the chives and bacon.

@Hammerblow I will for sure try this!  I love any high protein based meal and I've always loved bean salads and the energy it gives me to keep going without crashing.  Would be interested in any thing else you've found good for those long workouts.

 
@Hammerblow thank you for posting this recipe! As stupid as it sounds I have little desire to really ever eat. It's become a bigger issue now that my pancreas starting being stupid! 😳🤦‍♀️

So I am always looking for these types of dishes which gives me a big bang without a whole lot of effort plus a great protein hit too!

I made the bean salad and I'm serving it with broiled salmon.  It is delicious!!!  I cut a pink lady apple in mine for extra crunch.

I’m glad you tried it! 😀 A pink lady apple is a great shout. I love extra crunch too. Honestly the amount of peppers I go through in one week is ridiculous.

I love, love red and yellow peppers.  I buy a mixed bag that I found and their really small and sweet for snacking.  I'm going to add a bunch to my next batch of beans.  This is a great recipe!!!!

 
@Hammerblow I made the bean salad over the weekend. So, so good! I did add the apples too. 

I kept mine in the frig and used homemade pita chips and ate it as a dip. It is perfect for me to get in some good protein and sodium into my body. It was very refreshing and easy for me to eat.

Mail that is being sent from CAD to the US will just not be picked up. It all has to be private delivery services now.
