OK, holidays around the corner.... green bean casserole is usually a staple on a lot of folks holiday tables.... this is an easy change up.
Instead of using green beans, buy about 4 big bunches of reasonably thin stalked asparagus.
Cut off only top half of each stalk (end with the tip lol). Put the stalks in pot of water, bring to boil, reduce the heat to medium and lightly boil for 8-9 minutes.
Drain asparagus and then shock it in an ice water bath (crushed ice works better). Drain the cooled asparagus.
Follow your normal directions to make the casserole, EXCEPT instead of using cream of mushroom soup, use CREAM OF ASPARAGUS soup.
If you like asparagus, this knocks the crap out of the green bean version.

Yes, I use Campbell's. It's not down with the cream of chicken and mushroom, but up top where the cream of broccoli, celery, etc. reside on your local grocery store shelf.Yum! I love asparagus. I make a ton of shit with it. Blanch it then put in a skillet with olive oil, garlic, lemon juice and chopped red onion until it's all tender and almost charred a little. sprinkle some fresh parm on it... great side with chicken.Made this for Xmas Eve dinner. Can't wait to try it tonight.
